Gyuto Minamoto Sukehisa carbon steel 24cm

1 199,00 zł (≈ €274)

Minamoto Sukehisa (源助久) is a true heir to the Tokyo School of blacksmithing—a tradition that traces its roots directly to Edo-period swordsmiths who, following the 1876 ban on swords (Haitōrei), turned their craft to professional kitchen knives. Unlike large-scale mass-production centers like Sakai or Seki, Tokyo Hamono is a smaller, lesser-known scene—but precisely because of this, it's more authentic.

Description

Sukehisa Hamono Co., Ltd., located in Tokyo's Adachi district, built its reputation over decades by supplying commercial kitchens, traditional Tokyo butchers, and Western cuisine (Yo-shoku) restaurants in the capital's dining districts. The brand's philosophy was simple: utility, balance, and pure edge quality—no frills. The workshop was particularly known for its precise heat treatment of carbon steel—the yaki-ire and yaki-modoshi processes—which define the blade's character more than anything else. The workshop has since ceased production, and NOS Sukehisas are becoming increasingly rare on the used market.

Gyuto with bolster (ツバ付牛刀 240mm) — Sukehisa's flagship commercial line. On the blade is the full signature 登録 源助久 (Tōroku Minamoto Sukehisa) with the prefix 源 (Minamoto) stamped directly into the steel. On the handle is the silver TOHAKO 東京刃物工業(協)認定品 seal — a certificate from the Tokyo Cutlery Industry Association. SK monosteel, NOS condition. In original orange-brown checked box with manufacturer's leaflet.
